ECOLOGICAL OLIVE OIL
"El Pajarete Ecológico"

This olive comes from olives produced naturally on estates registered by the
Andalusian Ecological Committee. The surroundings of the River Guadalete and
the Grazalema Mountains National Park, produce different varieties of olives
such as the "lechina", the "manzanilla" and the "pinal", all of wich have
been greatly appreciated since Roman times (200 B.C. - 300 A.D.) for their
quality and fruity taste.
The milling of these olives takes place at the "The Alley" estate, situated
in Prado del Rey in the province of Cádiz (Spain). It has been registered by
the Andalusian Ecological Committee (no. 0044/I) as the only estate in this
province whose artisan methods make it unique.
The purity of the oil from this traditional mill is guaranteed by the
initial process of stone grinding and cold-pressing through hemp, followed
by natural clarification during a three-month decantation period in 19
century glazed earthenware vats.
This product is free from artificial additives (such as fertilizes or
pesticides) and has not undergone any unnatural process (high temperatures
or high pressure).
The preventive and curative characteristics of olive oil in cases of skin or
heart disease and also in arteriosclerosis, gastritis and high Cholesterol
levels, make it an indispensable product for healthy cooking and a healthy
diet.

This oil is obtained when cold,using old traditional methods,by the
precipitation of the mass-the olive mass is in a rotating drum and drips
naturally,without pressing-,this is the process of stone-grinding and
cold-pressing through hemp,from different varieties of olives from the area.

"The Alley". Acebuchina´s Special
The "Alley" olive mill produces a virgin olive oil obtained from the fruit
of the wild olive tree (O. Oleaster). It is harvested in the valley of the
River Guadalete in the surroundings of the Grazalema Mountains National
Park, in the province of Cádiz (Andalusia, Spain).
The tree which produces this fruit is notable for its stiff, straight, spiny
branches and its smooth bark and even more(so) for its extremely slow
growth; it can take up to seventy or eighty years to reach full maturity.
The wild olive is small with a large stone and little flesh. Very little oil
is obtained from it, although its flavour and aroma are unique. Production
is limited due to the difficulty in obtaining it.
This wild olive oil is produced in a century - old oil mill by the process
of stone - grinding and cold - pressing through hemp. It is clarified by
natural decantation in nineteenth century glazed earthenware vats which
preserve its qualities intact.

Exquisite pure olive oil,This oil the same as the previous two,comes from
selected olives harvested along the Guadalete river basin.This harvest of
olives is specially treated to produce an incomparable oil of the highest
quality with 0,7 degrees of maximum acidity.
